Just realized my knife sharpening angle was off by a few degrees
I spent about two hours trying to get a clean slice on a pork shoulder yesterday, thinking my blade was just dull. Turns out I had my sharpening stone set at 22 degrees instead of my usual 17, and the edge just wasn't biting right. How often do you guys check your sharpening guides to make sure they're still accurate?
