My neighbor asked why I always cut against the grain on his brisket order

He's a woodworker, said it's like planing against the wood grain versus with it. Made me think about muscle fibers differently. Anyone else ever get a tip from outside the trade that just clicked?

I mean, I actually get where he's coming from. If you care enough to order the good stuff, you probably care how it's made. It's not about turning off the work brain, it's about wanting the thing you're paying for to be right. Maybe he's just giving feedback because he's invested.

Custom brisket orders are a whole different level of commitment. That's not just grabbing dinner, that's a planned event. Paying for a special cut and then nitpicking the prep is wild to me. It's like buying a custom cake and then standing in the bakery telling them how to frost it.
