Old butcher told me to sharpen my boning knife every hour and I ignored him for years
I worked at a shop in Portland for about 5 years and an old timer named Joe kept saying I needed to hone my blade after every single use. I thought he was being dramatic and just wasting time. Finally tried it last month during a busy Saturday and my cuts were cleaner and my wrist didn't ache by noon. Has anyone else had an old school tip they brushed off that turned out to be gold?

Old butcher told me to sharpen my boning knife every hour" - Joe sounds like he knew his stuff. I ignored a similar tip about keeping my blade touched up and wrecked a good knife trying to push it through a stubborn cut. Now I hit it with the steel after every few pieces, night and day difference on my end.
