PSA: I keep seeing people at the shop leaving their boning knives in the sink overnight, and it's killing the edges

What's actually happening to the blade in the sink? Is it just water spots or does the moisture cause real damage to the steel itself? I've seen some guys at my place leave their knives in the bus tub all night and the edges look dull the next day. I'm trying to understand the science so I can explain it to the new kids without sounding like I'm just nagging them.

Honestly though, how bad can it really be? It's just water. A few hours in a sink isn't the same as leaving it out in the rain for a week. Most kitchen steel is made to handle some moisture. I feel like people make a bigger deal out of this than needed, acting like the edge turns to dust overnight. Sure, don't make a habit of it, but a one-time thing isn't a knife killer.
