Rush before the holiday rush nearly broke me, 200 lbs of prime ribs in one shift
Last Friday before the 4th, we got slammed. Three walk-in orders for prime ribs. Big ones. I was on the saw solo because my partner called out sick.
Cut 14 racks in 4 hours. Hands were cramping by noon. One chef wanted 2 inch cuts, the other wanted 1.5. Nearly mixed them up twice. Had to re-label everything with sharpie.
Made it through, but barely. Anyone else have a day where the schedule just goes sideways and you're the only one left to handle it? How do you keep your speed up without messing up the cuts?
