Saw a butcher in Kansas City break down a whole hog on a table in his shop window
Last month I was in Kansas City for a wedding and walked past a shop on Main Street where a guy was breaking down a whole hog right in the front window. He had maybe 15 people watching from the sidewalk, kids with their noses on the glass, and he just kept working and explaining each cut to a guy filming him on his phone. It got me thinking, how many of you do any kind of public facing stuff like that at your shop, or is it too much of a hassle with the crowd and the questions?
That bit about the kids with their noses on the glass really got me. I feel for the guy trying to work with a crowd staring at him, because every cut takes longer when you have people asking questions the whole time. My uncle ran a meat counter for years and he said the worst part was folks wanting a free lesson while he had orders piling up. Still, it sounds like that butcher handled it well, and those kids will probably remember it for the rest of their lives.
