Shoutout to the old guy at the Portland meat show who showed me a better way to break down a shoulder
I used to go straight for the seam, but he taught me to rotate the blade tip first, saving me 15 minutes per primal. Anyone else pick up a small trick that totally changed your speed?

Ever think about how the steel in your knife affects that kind of tip work? A really flexible boning knife can feel sloppy, but a super stiff one can bind. Finding the right middle ground made a bigger difference for me than the direction.

Forgot to mention blade thickness behind the edge. A thin grind on a stiff steel can still feel precise without binding.
