The old timer who pointed out my dirty boning knife at 6 AM
Guy at the wholesale market in Portland stopped me mid-cut and said 'son, that knife film is gonna send someone to the ER.' He was right - I'd been too lazy to wipe between beef primals. Ever had a customer complain about bone dust or silver skin left on?

My first week butchering at a little shop in Eugene, I left a smear of fat on a tri-tip and the customer brought it back to the counter dripping with grease... The old owner just shook his head and handed me a towel without saying a word. Bone dust is sneaky too, especially on chuck rolls, it gets into those little crevices and you don't see it until someone bites down on it.

@betty_palmer oh man, bone dust is the absolute worst. I did the same thing on a chuck roll once and had to watch a guy pick a tiny shard out of his teeth right in front of me, wanted to crawl under the counter.
