Thought vacuum sealing was overkill for my deer until a 180 pound buck in Missoula proved me wrong
Last November I shot a buck outside Missoula and did what I always did, wrapped the cuts in butcher paper and froze them. About 6 weeks later I pulled a backstrap out and it had freezer burn all down one side, gray and tough. My old timer buddy looked at it and said 'that's what a $60 vacuum sealer is for, dummy.' I went and got one the next day and now I'm never going back to paper for anything I plan to keep past a couple months. Anyone else switch over after getting burned, or do you still wrap by hand?
Wrapping in butcher paper isn't really what caused that burn, it was the air left in the wrap. Paper alone will let a cut dry out and go gray in a couple months no matter how tight you think you got it. The fix is to press plastic wrap right against the meat first, then paper over that, which is basically what the sealer does in one step. Vacuum sealing is easier and lasts longer, but plenty of guys got by for decades with the plastic then paper trick.
