Vent: Tried boning a whole ribeye with a cheap store knife vs. a nice Forschner and the difference was night and day

Wasted 20 minutes fighting silver skin with a dull blade before I grabbed my buddy's Victorinox and finished the whole primal in under 5, has anyone else found that one decent knife just saves your sanity in the cool room?

Watched my buddy nearly slice his thumb off with a dull knife then finish the whole side of beef in ten minutes with my Forshner.

Man that's such a mood. A decent knife makes everything feel less like a chore. Glad you got it sorted.

Respectfully gotta disagree with you there @luna891. A decent knife makes things easier but it's not some magic fix for bad technique. I've butchered plenty of primals with a sharp Chicago Cutlery from a garage sale and it did fine. The real problem is people relying on the blade to do all the work instead of learning how to follow the curves and use their other hand to pull the silverskin tight. A dull knife plus good hands beats a sharp one with sloppy cutting every time.
