Watched a guy ruin a whole ribeye primal in 20 seconds

Was at a demo in Kansas City last Saturday and this guy pulls out a dull breaking knife to separate a ribeye primal, then starts sawing through it like he's cutting cardboard. He mangled the spinalis so bad it looked like ground beef and the audience was just nodding along like that's normal. Am I crazy for thinking every shop should have a mandatory sharpening course before anyone touches a primal?

Man, that's painful to watch. It's the same thing everywhere though, not just in kitchens. People get so used to doing things the lazy way that they forget there's a right way. We've got a whole generation that thinks a dull knife is normal and that sawing is just how you cut meat. It's like everyone's in a hurry to get to the finished product and skips the basic skills that make it work. If you can't take ten minutes to learn how to keep an edge on your tools, you shouldn't be touching expensive product. It's just respect for the craft and the food, and that seems to be getting rarer.
