Tried to stretch a $3 rotisserie chicken into 5 days of meals and day 3 got weird
I bought a $4.99 rotisserie chicken from the grocery store on a Sunday and planned to make it last through Friday, shredding it into soup, tacos, and rice bowls. By Wednesday I was down to mostly dark meat and skin, and the soup I made tasted like wet cardboard, so I dumped in a can of diced tomatoes and a spoon of Better Than Bouillon to save it. How far can you actually stretch one of those cheap chickens before the meat goes rubbery, and does anyone have a trick for the last two days?
The soup tasted like wet cardboard because you were basically boiling chicken bones and calling it dinner. I don't get why people act like a $5 chicken is some kind of challenge you have to beat. Cook the chicken, eat it in two or three days, and move on with your life. Meat doesn't last forever and day 5 chicken is gonna taste like day 5 chicken no matter what trick you use. You already saved it once with tomatoes and bouillon, so just finish the thing in tacos or a quesadilla and stop overthinking it.
