A roaster in Seattle told me my water was too hard for light roasts
I switched to a Brita filter, and the fruit notes in my Ethiopian beans finally came through clear. Anyone have a favorite water recipe for brewing?

Yeah it's wild how much the little things we ignore can mess stuff up. I had the same problem with my sourdough starter, the tap water just killed it. Now I see it everywhere, like my houseplants got way happier with filtered water too. We spend all this money on good ingredients but the basic water gets overlooked.

It's crazy how water quality even affects coffee and tea, totally changes the flavor.

The mineral content in different waters really changes extraction rates for coffee. Have you tested your local tap water's TDS levels or just gone off taste?
