I finally got the bloom right after watching someone do it live

Saw a barista at a shop in Portland last week and he let the coffee sit like 45 seconds before pouring, I always rushed it. Tried it this morning with my V60 and the crust actually looked fluffy. Anyone else notice a big difference when they slowed down the bloom?

Whoa, that's a solid find. But here's the thing I gotta ask: when you waited the full 45 seconds, did the water actually drain through the bed differently, or was it mostly just the crust looking better? Because I've held my bloom longer before and got a fluffier top, but then the overall cup tasted kind of flat and muted. I'm wondering if that long of a sit changes the drawdown so much that you lose some of the brighter notes. What did your final brew time end up at compared to the rushed version?
