Just realized my morning pour-over went from bitter disaster to smooth perfection after one small tweak
I stopped using water straight off the boil and let it sit for 30 seconds before pouring, and after a week of that my coffee tastes completely different. Has anyone else found that water temp matters way more than they thought?

Oh man, water temp was my biggest game changer too? I used to just boil and pour right away like it didn't matter and my coffee was always kinda bitter and flat. Then I read somewhere to use water around 200 degrees and it totally clicked for me. I actually wait a full minute now and the difference is night and day, especially with lighter roasts. It's wild how something so simple changes everything about the taste, right?

oh man for real, that 30 second wait is everything. so did you notice the biggest difference with lighter roasts or does it help across the board? i've been trying different wait times but can't tell if my palate is just tricking me into thinking it's better.
