Showerthought: I thought my local shop's pour-over was just a slow gimmick.

I was at The Daily Grind in Austin, and the barista explained how the 4-minute brew time for their Ethiopian Yirgacheffe pulls out specific fruit notes you miss with a fast machine. Now I'm timing my own brews at home and the difference is wild. Does anyone else have a shop that completely changed their home routine?

That's a great point about the barista's experience. It makes me wonder, do you think the quality of the wait is different when someone else is making it for you versus doing it yourself? At home, those four minutes can feel like dead time, but in a shop, it's part of the show.

Four minutes for a single cup of coffee sounds like a lifetime to wait. That barista must have some serious patience to do that all day. It's cool that it actually makes a real difference though.

Totally get what you're saying, mary776. It makes me notice how we're all trained for instant results now, but some things just can't be rushed.
