Stop roasting your beans with the lid on or you're just steaming them
I visited 3 different roasteries in Portland last month and all of them told me the same thing - closing the lid on your bread machine or popcorn popper traps too much moisture and you end up with flat, baked beans instead of a real roast that develops flavor properly, so has anyone else had this ruin a batch before they figured it out?

@phoenix331 yeah three is a lot. I usually cap it at two max, then compare notes later.

Yeah keeping the lid on is like microwaving something when you meant to bake it.
