That barista at the Nashville pop-up taught me a trick about blooming my pour-over that completely changed my morning routine.
I was at this tiny pop-up called Eastside Brews in Nashville last Saturday and the barista showed me how a 45-second bloom with a spiral pour instead of my usual circular one fixed all my channeling issues, has anyone else had a random stranger fix their coffee game like that?

Fell for it hard at a coffee truck in Portland. Guy showed me to wet the filter first and it stopped my paper taste problem dead. Changed everything for me.

Oh man, that spiral pour thing is wild! My friend Dave tried it at his kitchen table after watching some random video online and he said it fixed his bitter brews overnight. He kept getting these weird dry spots in his filter before, but the spiral just made the water hit everything evenly somehow. He even started timing his bloom to exactly 45 seconds like you said, and now he swears his morning cup tastes like something from a shop. Have you tried it with different beans or just the one you got at the pop-up?
