The pour over snob at my local shop made me rethink everything

I was at Brew Lab in Austin last Saturday and this guy spent 5 minutes lecturing the barista about how their water temp was ruining the beans. Honestly I rolled my eyes at first because who talks to workers like that? But then the barista actually handed him a thermometer and let him check it at 198 degrees instead of 200. The guy bought the drink and said it was way better. Made me wonder if I've been missing something by just trusting the machine every time. Has anyone else had a store employee actually let you tweak something?

...wait hold on, the barista actually handed over a thermometer? That's wild. I've never seen anyone in a coffee shop let a customer start testing their equipment like that.

Wait, did they let him actually touch the machine or just hand over a little probe thermometer to test the water temp? That sounds like a pretty trusting shop owner, most places around here would kick you out for even asking that... was the barista nervous or just going along with it like it was no big deal?
