Overheard my buddy say tipping should be optional everywhere, and I actually agree now. After 3 years in food service, I've seen how the system rewards whoever is best at flirting, not whoever does the actual work. If we got rid of tips and paid everyone $18 an hour, the job gets way better for the people who matter, right?
We tried switching to a flat hourly rate at our place and it backfired hard, the good servers quit and the slackers stayed. Turns out tips were the only thing keeping the fast people motivated to hustle. You gotta find a middle ground, like tip pooling across the whole front of house, or you just end up with a different kind of mess.
