Burned my chili so bad the fire alarm went off, but the leftovers were somehow perfect

Last Tuesday I tried to multi-task, threw a pot of chili on high and went to fold laundry. Forgot about it for like 25 minutes. Bottom was a black crust, smoke everywhere, apartment smelled for two days. But I scraped off the burnt part and the rest was actually the best chili I've ever made. The longer simmer on high caramelized the onions or something. Now I'm scared to repeat it on purpose. Has anyone else accidentally charred something and the result was better than the normal version?

Oh man, the accidental genius method. I did that with roasted veggies once and now I'm convinced my kitchen skills peak when I'm actively ignoring them. Maybe the secret ingredient is panic and smoke detectors.
