My grandma's bread recipe beat my fancy stand mixer bread
I spent a whole Saturday last month with my KitchenAid, weights, and instant yeast trying to replicate her loaves, but they came out dense and gummy. Then I found her old handwritten card and noticed she just used all-purpose flour, water from the tap, and her bare hands, no measuring cups even written down. Has anyone else gone backward to older methods and gotten way better results than the new gear?

Boy, I have to disagree with you there. I tried my grandmother's way a few times, cornbread and biscuits mostly, and it was a mess every single time. She never wrote anything down either, so I was just guessing at the flour and liquid amounts. My scale and the stand mixer got me a steady, light loaf that actually rises the same way each week. I am glad the old way works for you, but I think most of us need some kind of measuring and a machine to get consistent results. The good feelings about grandma's hands don't fix a dough that is too wet.
