The day I realized I was using my kitchen knife totally backwards for 10 years
So my buddy Mike, who worked at a fine dining place in Portland, came over to watch the game last month and saw me rock-chopping an onion with the blade flat against my knuckles. He just stared at me and said, 'Dude, you're supposed to curl your fingertips under and use the knuckle as a guide, not flatten them out.' I argued with him for a solid minute because I'd been doing it that way since college and thought I was being safe. But I tried his way on the next onion and I swear I cut twice as fast and didn't even nick my finger once. All those years I thought I was being smart, but really I was just making it harder and riskier for no reason. It's embarrassing how long I stuck with a bad habit just because nobody ever told me different. Has anyone else had that moment where you realized a basic kitchen skill you thought you had down was completely off?

Same, but substitute "knife" for "box grater" and "fingertips" for "knuckles.

Used to swear by a sharp knife for everything, but you totally sold me on the box grater trick. Never going back now. What made you switch over?
