The family reunion BBQ where my potato salad turned into soup

Back in 2019 at my cousin's place near Austin, I volunteered to bring potato salad for 30 people. I figured I'd boil the potatoes the night before, but they sat in the fridge with the dressing on and just turned watery. By the time I got there, it looked like someone dumped a bucket of milk into a bowl of chunks. My aunt tried to be nice and said 'it's rustic,' but nobody touched it. I spent the whole party watching my sad soup sit next to the brisket. Now I always drain the potatoes extra hard and add the mayo at the last minute, but I still get nervous every time I bring a dish to a potluck. Has anyone else had a side dish completely betray them at a big gathering?

Wait, did the dressing break because they sat overnight, or was it the potatoes themselves leaking water? I mean, I've had potatoes weep on me before but never to full-on soup level.
