Cleaned out my pantry and found 7 cans of beans I forgot about, need ideas before they go bad
So I was digging around my pantry on Saturday and counted 7 cans of black beans, 3 of chickpeas, and a bag of rice that's been sitting there since who knows when. I'm trying to use up everything before I buy more groceries and my usual move is just dumping beans in a pot with some cumin, but that's getting old. Anyone got a solid recipe that uses a bunch of cans at once? I'm feeding two people and I'd rather not eat the same thing for 5 days straight.
Embrace the bean monotony and just make a massive pot of black bean soup, then freeze half so you're not actually eating it for 5 days straight. Seven cans is barely enough for two people anyway, so you might as well buy more before you run out.
