Cold rice fried rice works, but is it actually better than fresh? Here's my 5 day test
I kept seeing people say you have to use day old rice for fried rice, so I tested it. Same batch of rice, same pan, same oil, same soy sauce. I made one batch with rice straight from the pot at 7pm. Next day at 7pm I made another batch with the same rice from the fridge. The cold rice did hold up better, no mush, better texture. But the fresh rice took less time and honestly the flavor was close enough that I wouldn't notice if someone served me either one. I did this 5 days in a row with different sauces to be fair. Am I missing something, or is this just a habit people repeat without testing? Anyone else tried this side by side?

My 27th birthday party taught me that lesson when I made fried rice for 14 people with fresh rice and it came out like a weird risotto pancake. So I respect the 5 day commitment, most of us just panic and order takeout after one failed batch. The texture difference is real but the flavor thing is what gets me, day old rice doesn't magically taste like it came from a wok on a fire. Maybe the real secret is that cold rice forces you to actually season it better instead of relying on the rice's natural moisture. Honestly, I'd rather spend 10 extra minutes fixing the texture than wait 24 hours for a tiny upgrade.
