Found 3 lonely zucchinis and half a jar of salsa in my fridge last Thursday, what do I even make?
So last Thursday I got home late from work in Tucson and the fridge was basically empty except for 3 sad zucchinis, half a jar of salsa, and some leftover white rice from Sunday. I threw the zucchinis in a pan with olive oil and garlic, dumped in the salsa, and mixed it all with the cold rice. It actually turned out pretty good, but now I have the same exact leftovers again and I don't want to eat the same thing twice. Anyone got ideas for using up old zucchinis and salsa without just making the same skillet thing again?
Have you ever tried baking the zucchini into little patties or fritters? I read somewhere that you can shred zucchini, squeeze out the water with a towel, then mix it with an egg and some breadcrumbs or flour and pan fry them. The salsa could work as a topping if you drain it a bit first, kind of like a chunky sauce. Cold rice is tricky though, maybe fry that up separate with an egg and soy sauce so it feels like a different meal. Your mileage may vary on the texture but it beats eating the same skillet twice.
