Stale bread used to get tossed, now it's my dinner hero

Three years ago I threw out half a loaf of sourdough because I figured crusty bread was useless. Last month my neighbor Carol showed me her panzanella trick using old bread, olive oil, and whatever veggies were dying in her crisper drawer. I tried it with some cherry tomatoes and a sad cucumber from my fridge, and it beat any fresh salad I've made in ages. Anyone got a go-to recipe for rock-hard bagels that's better than just reheating them?

Is it really better, or are you just hungry with low standards?

Ha! Okay, you got me there. I used to be the same way, I'd eat anything after a long hike and call it gourmet. But no, this place actually changed my mind. I went back a second time when I wasn't starving, and it was still really good. The sauce had this smoky kick to it that I still think about, and the meat was super tender. So yeah, I'll admit my first review was a little generous, but my second one was honest.
