That noodle trick from a diner cook in Tucson stuck with me

I overheard a short order cook say he always saves the pasta water in a coffee mug before draining, then adds a splash when reheating leftovers in the microwave. Tried it last night with some week old spaghetti and the sauce actually came back to life, no dried out clumps. Anyone else got a weird habit like that for reviving sad leftovers?

Read somewhere that adding a little vinegar to leftover rice before microwaving keeps it from getting that weird hard texture. Works way better than just water.
