The $8 Amazon gadget that saved my date night dinner... sort of

I kept burning garlic every single time I tried to make pasta sauce for a date. Like it would go from golden to black in 30 seconds flat. Then I realized I was using a pan that was way too thin and holding heat wrong... my roommate pointed it out after I complained for the 5th time. Picked up a cheap cast iron skillet from Target for 20 bucks and now my garlic actually comes out right. Has anyone else had a cooking fail that ruined a whole date?

Garlic doesn't burn because of your pan, you're just cooking it too hot and not paying attention.

Ben662 probably knows his stuff about heat control, but I read somewhere that thin pans don't distribute heat evenly so the hotspots are way worse for stuff like garlic. That first scorch happened because you couldn't get the pan to settle into a stable temperature, it just kept spiking. I used to burn onions in a nonstick pan all the time before I switched to a thicker stainless steel one I found at a thrift store for like 8 bucks. The difference was night and day, not just for garlic but for everything from eggs to pancakes. Sometimes it's the tool making things harder even if the technique matters too.
