My 'all-cauliflower' diet lasted exactly 3 days before I gave up

I saw a video about swapping every carb for cauliflower. Cauliflower rice, cauliflower pizza crust, even tried mashed cauliflower. By day three, I was so bloated and gassy I couldn't focus at work. My partner finally said, 'The house smells like a compost bin, please stop.' Has anyone else had a veggie substitute plan backfire spectacularly?

Wait, the whole house really smelled like a compost bin? That's wild, I thought it was just me getting a little bloated. @eva908 might be onto something about the FODMAPs, because I tried a full week of cauliflower everything once and by day 4 my stomach was making noises like a clogged garbage disposal. I thought it was normal too, until my roommate threatened to make me sleep in the garage with the cauliflower.

Actually, that level of gas isn't normal for everyone. It sounds like your gut might not handle a ton of FODMAPs well, and cauliflower is packed with them. Going all in can really mess some people up, not just cause a little bloat. Maybe trying a low-FODMAP veggie like zucchini would be easier on your system?
