Found a kraut farm in Wisconsin
Was driving through last week. They had barrels of fermenting cabbage. You pick up tips from travel?

They must have had like fifty barrels just sitting out in the field. I can't even picture how much cabbage that actually is, or where you'd even buy it all. The smell driving past must have been something else.

Notice this a lot now, this return to old ways of doing things. You see it with people making their own pickles at the farmers market stand, or friends getting deep into baking their own sourdough. That kraut farm feels like part of that same move. It's like we got so used to everything coming from a factory shelf that seeing the real, messy process feels special again. Makes you wonder what other basic skills we've let fade away.
