Wing it til I crash and burn, that's my style. Learned that the hard way with brisket last summer, ended up feeding the dog some expensive charcoal. Maybe I should actually measure stuff one of these days.

That specific percentage thing is a perfect example. People get really dialed in on exact numbers for hobbies, from brine to woodworking jigs. Makes a huge difference when you stop winging it and follow a tested formula.
