Rant: The 'fermentation bar' I tried in Portland had their crocks sitting in direct sunlight all day.
I stopped by that new spot on 3rd Avenue yesterday and every single one of their kimchi and kraut crocks was on a shelf getting full afternoon sun, which just seems like a basic temp control fail, right?

That "basic temp control fail" is everywhere now. Feels like people just skip the fundamentals for the aesthetic. Saw it with sourdough starters at a cafe last week too.

Totally get what you mean about the sourdough thing. It's like they want the pretty crust and holes before they can even tell if the starter is alive. Where else do you see this happening? Is it just food trends or spilling into other stuff too?
