Vent: My sauerkraut brine level issue took a full month to figure out

The liquid kept dropping below the veggies, and I was scared of mold. I finally realized my apartment's dry winter air was evaporating it way faster than expected. Anyone else have to top off their ferments more often in certain seasons?

Oh yeah, I read that dry air can really suck the moisture right out of a ferment. I keep a little spray bottle of brine handy for my kimchi in the winter for that exact reason.
