Can we talk about whether street food tours should prioritize speed or authentic preparation times?
Slower cooking methods define genuine street food, despite the wait.

Authentic street food loses its soul when prepared too quickly. The waiting time is part of the experience, letting flavors develop properly. Tours should embrace that pace instead of compromising for convenience.

Prioritizing speed on tours can pressure vendors to abandon slow methods just to keep up. When they're pushed to serve faster, some might prep ingredients ahead or simmer broth less, losing that deep flavor. In the end, everyone loses because the authentic dish gets watered down.

Seriously, my friend did a street food crawl in Hanoi and the guide kept skipping the pho spots because the broth took too long. He finally snuck back to one later and said that hour-long simmer made all the difference... like, that's the whole point.

Yikes, that's a major fail on the guide's part. Was the tour marketed as an 'authentic' experience, or did they just prioritize quantity over quality? Broth that's rushed defeats the whole purpose of pho, since the depth comes from slow cooking. How can you call it a street food crawl if you're avoiding the dishes that define the culture?
