Can we talk about the surge in lentil-based vegan burgers at local diners?
They're holding their shape way better than the bean patties from last summer.

The structural integrity of those lentil patties is no accident. I was skimming a culinary science blog that broke down how lentil proteins and starches form a more cohesive matrix than most legumes. Apparently, it's all about the lentil's ability to hold moisture without becoming mushy, which bean blends often struggle with. Last summer's bean burgers were more of a suggestion than a patty, really. Now at least you can pick up the burger without it disintegrating into a sad pile on the plate. Progress, I suppose, even if it's just in vegan burger architecture.

I mean, lentil patties are way better structurally. Idk, maybe it's just me but bean burgers always crumble. Just feels like a waste if it doesn't hold together.
