Reflecting on my shift towards seasonal vegan stews

A few years back, I committed to crafting a vegan stew every Sunday using whatever produce was freshest. This routine has not only reduced food waste but also connected me more intimately with the cycles of nature in my cooking. Do others here feel that aligning meals with the seasons has enriched their vegan experience?

Tbh my fall squash stew last year was a kitchen disaster but it tasted amazing.

Isn't it wild how the ugliest stews can sometimes be the most delicious? I completely agree with @lewis.tara that even failed attempts fight food waste by making us use what we have. Last winter, I overcooked a beef stew until it was basically mush, but adding some herbs and serving it over rice saved the day and cleared out my veggie drawer. It looked like a crime scene in my pot, but we ended up loving it and it prevented so much from going to the trash. What's your most memorable kitchen rescue that turned out surprisingly good?
