My brother in law told me last week his shop's AI tool caught a brake issue before his tech did, and I have not stopped thinking about it

That story is probably missing a few details though. AI tools don't really "catch" things on their own, they just flag patterns based on data they were trained on. A brake issue that gets flagged usually means the tool saw something in the readings, and the tech either didn't look there yet or the tool just got lucky. Not saying it's useless, but your brother in law might be telling it a little better than it actually went down.
