Flux on copper vs press fittings, which do you trust on gas lines?

Did a job last month in Tacoma where the homeowner wanted a gas line for a new range. I've always brazed copper with flux, but my partner swears by press fittings now. He timed me: 45 minutes for my braze joint versus 12 for his press. Mine passed pressure test fine, but his was done before I even got the torch lit. Are we just old school stubborn, or is there a real durability gap with press fittings on heat cycles? Anyone had a press fitting fail down the line?

Mine's still holding fine ten years later, so slow and steady works for me.

Wait, 45 minutes for ONE braze joint? That's not old school, that's just slow. Even the pickiest inspectors I know would flag that as way too much heat in one spot.
