Had to pick between a 5am start or a midnight bake for a 200-cupcake wedding order in Phoenix

I chose the midnight shift, which was fine until my cat, Buster, decided the cooling rack was his new throne and I had to re-ice a dozen vanilla bean cupcakes at 3am, so what's your weirdest late-night baking disaster?

My worst was a collapsed cake at 2am, no cat to blame but my own sleepy math.

Okay, but Phoenix is in a different time zone, so your midnight there was my 2am here. That math always messes with my head when I order supplies. My weird one was a buttercream that just would not set, turned out the fridge was on the fritz. Spent hours trying to fix it before I realized the machine was the problem, not me. Had to run to the 24-hour store for more butter.
