I swapped butter for coconut oil in my shortbread recipe and it turned out weirdly chewy

I used the exact same amount, but the texture was totally off, not crumbly at all. Anyone have a good ratio for a proper coconut oil shortbread that actually snaps?

My grandma's old recipe uses half coconut oil, half butter for that perfect snap.

Wonder if that combo changes how it melts in your mouth too.

Actually think it's the other way around. Coconut oil sets up harder than butter, so it gives more snap.
