I thought weighing flour was a waste of time until my cookies kept failing

For years I just scooped flour straight from the bag, and my results were always hit or miss. Last month, I finally bought a $25 kitchen scale after my third batch of rock-hard cookies. Using it showed I was packing in almost 30% more flour than the recipe called for. Has anyone else had a simple tool completely fix a stubborn baking problem?

My grandma's old bread recipe just said "flour until it feels right." Took me years to realize her "right" was exactly 520 grams every single time.

Old recipes are basically secret codes. My mom's meatloaf just says "some breadcrumbs" and it took me forever to figure out she meant the whole sleeve from the box. They just KNEW without measuring.

That "feels right" thing is so real. My grandpa's pancake recipe just says "a good pour of milk" and I had to watch him make it to see he was using the same chipped blue cup every time. It was almost exactly one and a half cups.
