Just saved a batch of croissants with a cheap oven thermometer I picked up for 8 bucks

My oven was running 50 degrees hot without me knowing and that little gauge stopped me from wasting another 6 hours of lamination work, has anyone else found their dial is way off from what it says?

Used to think that was overkill for home baking. Thought my oven was fine, you know, set it to 350 and trusted it. Then I made a batch of macarons that came out completely flat and hollow, wasted like four egg whites and a ton of almond flour. Grabbed a thermometer out of frustration and found out my oven was running 30 degrees low. Now I keep it in there all the time, check it before anything goes in. You really can't trust the dial, every single oven is lying to you until you prove it otherwise.

The same thing happened with my toaster oven last month. It said 350 but water barely simmered. Now I just assume every appliance number is a LIE until proven otherwise. Ovens, fridges, even my bathroom scale seems to have its own reality. It's like we're all just guessing based on what some factory worker set the dial to twenty years ago.

Thermostats lie, but humidity sensors in ovens are even worse for pastry.
