PSA: I just hit 500 loaves of sourdough in my home oven

I started a starter from scratch in my Chicago apartment during a cold snap three years ago and kept a little notebook to track each bake. Yesterday I made a simple country loaf and realized the tally hit 500, which felt huge for just a home baker. Has anyone else hit a personal baking number that made you pause?

What do you do with all that bread? I hit a big number last year and my freezer was a solid brick of sourdough. Started giving loaves to my mail carrier and the guys at the auto shop just to clear space.

The notebook is the real story. That's 500 data points on humidity, flour brands, even your own mood. I bet if you graphed your oven spring scores or crust color notes, you'd see the story of three Chicago winters in your kitchen. It's a logbook of tiny failures and wins most people just forget.
