The bakery on 5th in Portland puts salt in their chocolate chip cookies and I can't decide if I love it
Stopped into a small bakery on 5th Ave in Portland last Tuesday and grabbed a chocolate chip cookie on a whim. First bite hit me with a salty kick I was not expecting, and after asking the counter girl she said they add a full teaspoon of flaky salt to the dough plus more on top. Half of me thinks it's a gimmick that covers up cheap butter, the other half thinks it's the best cookie I've had in 3 years. I tried making them at home with 1/2 teaspoon and it tasted flat by comparison. So now I'm stuck: is salting the dough a real technique or just a trend that tricks your taste buds into thinking it's better? Curious what you all think, do you salt your cookie dough or keep it in the topping only?
