I was in my kitchen at 11pm, staring at a flat jar of starter that smelled like old socks instead of beer, with 80 rolls due at 9am. I ran to the 24 hour gas station, grabbed a packet of dry yeast, and fed it a spoonful of honey, and somehow the dough rose by morning. Has anyone else had to fake it with instant yeast when the real stuff tanked, or am I the only one keeping that secret?
