A diner told me my sauce was too sweet, and at first I was pissed

Ngl I thought she just had bad taste, but I cut the sugar by half in my béchamel and suddenly the whole line stopped complaining about clashing flavors. Has anyone else had a customer call out something that actually made their food better?

Wait isn't béchamel a white sauce though? I thought sweetness in that comes from the milk and maybe a little nutmeg, not sugar. You adding sugar to your béchamel or was it a different sauce? I've had a customer tell me my chili was too watery once and I was annoyed but turns out I was rushing the simmer. After I started letting it reduce properly it thickened up way better.

Man I gotta say I disagree with this whole premise though. Taking feedback from random customers is a slippery slope, pretty soon youre changing your whole menu because one person said the burgers were too salty. Trust your own palate, not every complaint is a hidden gem of advice. You really think that diner knew what she was talking about or was she just having a bad day?
