Been doing this 18 years and just realized most new cooks don't taste as they go

I noticed last weekend during service that three of my line cooks added salt to a finished sauce without checking it first. How do you get someone to build the habit of tasting every step when they're in the weeds?

Same thing with people not reading labels before cooking. My buddy threw away a whole steak cause he didn't check the salt content on the marinade first. It's like people just rush through everything now. No pause to think or check. Just react.

Throw a salt bomb at @thomas275 and tell him it's a "flavor explosion" (yeah, right). I swear, some of these kids think tasting is just optional homework instead of, you know, the actual job.

Pull them aside before the rush. Give them a clean spoon and a small cup of the base sauce. Tell them to taste it, then add salt to their own portion. Do that three days in a row. It sticks eventually cause they hate wasting food or looking dumb in front of you.
