Burnt a whole hotel prep list on Mother's Day brunch

Was at the Hilton in Nashville. Forgot to set my timer on the bain marie for hollandaise. Split in five minutes flat. Had to scramble 36 eggs in ten minutes while the GM stood there watching. Ever had to emergency fix a sauce station mid-service?

Respectfully, a backup batch of hollandaise in the walk-in would've saved you there.

Prepped a backup batch of hollandaise in a six pan on the line before service started. Set it over a bain-marie with plastic wrap tight, kept a thermometer in the water. That backup saved me twice last weekend when the main pot started breaking down from too many tickets. Just gotta watch the temp on the bain-marie, keep it around 140 and it holds for a couple hours easy.

You mean there's people out there who actually prep a backup before the rush hits? I usually just gamble on my main batch like a normal person and then do the walk of shame to the walk-in. At least you gave the GM a good show.
